Job Description
Prepare and cook authentic Lebanese and Middle Eastern dishes according to approved recipes and established standards.
Ensure the consistent quality, taste, freshness, and presentation of all food items.
Prepare Lebanese specialties, including mezze, salads, grilled meats, kebabs, marinades, and other assigned menu items.
Follow standardized recipes, portion controls, and plating guidelines.
Assist in developing new dishes, seasonal menus, and daily specials under the guidance of the Head Chef.
Manage the daily operations of the assigned kitchen section and ensure readiness before each service.
Coordinate with other kitchen sections to ensure timely and efficient food preparation.
Ensure all orders are prepared and served within the required time while maintaining quality standards.
Monitor mise en place and ensure adequate stock levels throughout the service.
Maintain the highest standards of personal hygiene, food safety, and kitchen cleanliness.
Ensure compliance with HACCP requirements and hotel food safety procedures.
Monitor food storage temperatures, labeling, expiry dates, and stock rotation using FIFO principles.
Prevent cross-contamination and ensure the safe handling of raw and cooked food.
Ensure all kitchen equipment, utensils, and workstations are cleaned and sanitized properly.
Report any food safety concerns, equipment defects, or maintenance requirements promptly.
Ensure all dishes meet the restaurant's quality, presentation, and consistency standards.
Maintain the authenticity of Lebanese cuisine while following the restaurant's approved recipes.
Accommodate special dietary requirements and food allergies in coordination with the culinary team.
Qualifications
Previous experience in a similar kitchen position, preferably in Lebanese or Middle Eastern cuisine.
Strong knowledge of Lebanese culinary traditions, ingredients, spices, marinades, and cooking techniques.
Good understanding of food safety, HACCP, and kitchen hygiene standards.
Ability to lead a team, work under pressure, and maintain high standards during busy operations.
Strong organizational, communication, and time-management skills.
