With the global growth of our brands, you will be an integral part of the Resort’s success. As a Commis II, you will support the kitchen team in preparing high-quality dishes and maintaining exceptional culinary standards. You will be responsible for food preparation, mise-en-place, and assisting in the daily operation of your assigned kitchen section. Working closely with senior chefs, you will ensure consistency in food quality, adhere to hygiene and food safety standards, and contribute to delivering an outstanding dining experience for our guests.
Key Duties and Responsibilities:
- Assist in the preparation, cooking, and presentation of authentic dishes in accordance with resort standards, recipes, and quality expectations.
- Take responsibility for assigned kitchen sections and ensure smooth daily operations under the guidance of senior chefs.
- Prepare and organize mise-en-place efficiently to support timely food production and service.
- Ensure consistency, quality, and correct portioning of all Italian menu items.
- Inspect ingredients for freshness, quality, and compliance with food safety standards before use.
- Follow proper food storage, labeling, and stock rotation procedures (FIFO) to maintain product quality and minimize waste.
- Maintain high standards of hygiene, cleanliness, and food safety in compliance with HACCP and company guidelines.
- Monitor and minimize food wastage while maximizing the efficient use of ingredients.
- Support senior chefs in training and guiding Commis III colleagues and kitchen trainees when required.
- Ensure timely preparation and delivery of food during service periods while maintaining quality and presentation standards.
- Clean, maintain, and properly use kitchen equipment, reporting any defects or maintenance issues promptly.
- Assist in receiving, storing, and monitoring stock levels to ensure adequate supplies for daily operations.
- Coordinate effectively with other kitchen sections to ensure seamless service and guest satisfaction.
- Assist in the preparation of daily specials and seasonal menu offerings as directed by senior chefs.
- Support banquet functions, special events, and high-volume operations as required.
- Attend departmental briefings, training sessions, and team meetings to enhance culinary skills and operational knowledge.
- Maintain a positive, professional, and team-oriented work environment at all times.
- Comply with all company policies and local health, safety, and sanitation regulations.
A suitable candidate should have 1–2 years of experience in a quality hotel, resort, or restaurant environment. Strong knowledge of basic food preparation, cooking techniques, and kitchen operations is essential. The candidate should be a motivated team player with good communication and interpersonal skills, a positive attitude, and a commitment to maintaining high standards of food quality, presentation, and hygiene. Good English communication skills are required, and knowledge of an additional language is an advantage.
