About the Role
As a Sous Chef - Butchery, you will support in leading all butchery operations, ensuring the highest standards of quality, consistency, food safety, and productivity. You will oversee the preparation and fabrication of meat, poultry, and seafood products, ensuring all items are processed according to brand standards and operational requirements. In this role, you will supervise and develop the butchery team, manage inventory and yield control, maintain HACCP standards, and collaborate closely with culinary teams across the resort to ensure seamless production and exceptional guest experiences.
About You
The ideal candidate will have previous experience as a Sous Chef or a strong Junior Sous Chef within a high-volume luxury hotel, resort, or large-scale food production environment, with a strong specialization in butchery. You possess excellent knowledge of meat cuts, fabrication techniques, portion control, and food safety practices. A hands-on leader with strong organizational skills, you thrive in fast-paced environments and are passionate about coaching and developing team members. A commitment to quality, attention to detail, and a collaborative approach are essential for success in this role.
