THE TEAM
The Culinary team at Rosewood Abu Dhabi is dedicated to delivering exceptional dining experiences that showcase creativity, craftsmanship, and innovation. The Pastry division plays a vital role in elevating the guest journey through exceptional desserts, artisan bakery products, bespoke celebration cakes, afternoon tea offerings, and large-scale banquet production.
As Executive Pastry Chef, you will report to the Executive Sous Chef and lead the pastry operation across all outlets, events, and culinary experiences throughout the hotel. You will inspire a team of talented pastry professionals while driving innovation, quality, and operational excellence.
YOUR ROLE
As Executive Pastry Chef, you will be responsible for the strategic and operational leadership of the Pastry Department, ensuring the highest standards of quality, creativity, consistency, and profitability across all pastry and bakery offerings.
You will oversee menu development, production planning, team leadership, food cost management, and quality assurance while creating innovative concepts that enhance the guest experience and strengthen Rosewood Abu Dhabi’s culinary reputation. Through your vision and expertise, you will cultivate a culture of excellence, collaboration, and continuous improvement within the pastry team.
HOW YOU’LL MAKE THE PLACE
- Lead all pastry and bakery operations across restaurants, lounges, in-room dining, banquets, special events, and VIP experiences
- Develop innovative dessert menus, seasonal offerings, artisan bakery products, and signature pastry concepts that enhance the hotel's culinary identity
- Ensure exceptional standards of product quality, consistency, presentation, food safety, and hygiene throughout the department
- Drive operational excellence through effective production planning, inventory management, purchasing, and cost control initiatives
- Recruit, develop, mentor, and inspire pastry associates while fostering a high-performing and collaborative team culture
- Partner closely with Culinary, Food & Beverage, Events, and Sales teams to deliver exceptional guest experiences and successful event execution
- Continuously monitor industry trends and introduce creative techniques, products, and concepts that keep the pastry operation innovative and competitive
- Ensure departmental goals are achieved through effective leadership, financial discipline, and a commitment to excellence

- You have significant leadership experience within pastry operations in a luxury hotel, resort, Michelin-recognized venue, or high-end hospitality environment
- You are passionate about pastry arts, bakery craftsmanship, innovation, and creating memorable guest experiences
- You possess advanced knowledge of modern desserts, artisan breads, chocolate work, sugar artistry, plated desserts, specialty cakes, and large-scale production
- You demonstrate strong financial acumen, including food cost management, inventory control, labor planning, and profitability optimization
- You have a proven ability to lead, inspire, and develop diverse culinary teams while maintaining exceptional standards
- You thrive in a dynamic environment, balancing creativity with operational discipline and business objectives
- You communicate fluently in English; additional language skills are considered an advantage
